truth is, i dont really follow any sort of recipes. i like the freedom of a little bit of this, and a little bit of that. like life, you gotta feel it. but here is the rough outline.
1 can matiz sardines with chili oil (DO NOT DRAIN the oil)
1 cup shredded brussels sprouts
handful of curly kale
handful of baby spinach
1tbsp trader joes coconut amino acids
1 tbsp capers
1 tsp orange zest
1 tsp fresh chopped ginger (i use paste from Trader Joes)
chicken or veggie stock to deglaze
Maille creamy dijon mustard to taste
fresh cracked pepper
heat non stick pan on medium high. add coconut oil + wait until smoking. add shallot, ginger, capers. add brussels sprouts. lower heat, allow sprouts + shallot to caramelize slightly and cook thru. if getting too brown, deglaze with stock. add kale + spinach. add rest of stock + cover with lid so veggies can steam + cook thru. when tender, turn off heat + remove from stove. toss in reserved oil from can, tsp of dijon. serve into bowl. place sardines on top. finish with orange zest + crack pepper. enjoy.
