Fridge Frittata

When i was in sonoma (on a date, nonetheless) one of the highlights was bringing home subpar leftovers and cooking up something fun the next morning. Pictured: short rib french fry frittata. You can really use ANYTHING as long as you have eggs and an imagination.

Serves 2-3ppl

short rib hash
french fries
butter / olive oil for pan
kale
3 eggs

Preheat oven to 350 degrees. Beat eggs vigorously. Heat saute pan on high. warm leftovers for a moment or two - let fries (potatoes etc) crisp. Add eggs to cover. Let the ingredients integrate with the eggs, using a rubber spatula pull eggs away from sides of pan creating volume / fluffy texture. Put entire pan in oven for 8-10 minutes. Checking until eggs are cooked thru. One finished, careful not to touch hot handle without oven mitt, remove from oven. Can re-flip if you wish or just remove onto cutting board. Cut + serve.
