Coffee Garlic Crusted Chicken with Carrots

There’s just so much ease in prepping a one pot meal, Coffee Garlic Crusted Chicken with Carrots.

Preheat oven to 425 degrees.Heat a cast Iron pan with EVOO, smoking. Season the pan (I love TJ’s coffee garlic blend), put chicken pieces or preferably a spatchcocked chicken in skin side down. Cook until browned and crusty. Flip and season the cavity, heavily. On the sides sear veggies of choice- I did onions, garlic, carrots. Once the chick has good color, remove from stove and place in oven uncovered. Cook for 35 minutes. Turn off oven. Rest for 5-10 minutes to let the juice settle before cutting.
