Crispy Cauli Rice Baby Eggplant Purple Basil
Store Bought Peanut Sauce
Saute pan. Add coconut oil. Add eggplant (can salt first to remove moisture) Add cauliflower rice. Saute until softened. Can put lid to steam if preferred. Add bok choi. Saute until vegetables are cooked thru. Toss with store bought peanut sauce. I love trader joes from refregerated aisle. Top with basil and toasted coconut for texture. Serve.
